Sunday Casserole...



Chicken, Broccoli & Rice Casserole

In case ideas for dinners come in handy... this was our very own creation this past Sunday.
Everything was cooked and then layered together which cuts down on baking time and adds flavor. 

Preheat oven to 350F
Lightly oil 2.5Qt casserole dish, set aside

4 Cups of cooked Jasmine rice
3 Sautéed boneless chicken breasts
1 Steamed bunch of broccoli
2 Cans of Campbell's Broccoli and Cheese condensed soup
1 Cup of milk
~1/2 Cup of shredded cheese

Boil 2 cups of rice in 4 cups of water until done.  Heat extra virgin olive oil on medium temp.  Add chopped onion, then garlic slices.  Add chicken medallions and sauté all three together.  (Avoid temptation to turn medallions 50 times, as this will make them tough.)  Flip chicken when you see pieces begin to turn white.  Steam broccoli pieces until they turn that perfect Kelly green.  Remove from heat.  

In casserole dish, layer in rice, chicken, broccoli.  In pan used for chicken, add the 2 cans of soup and 1 can of milk.  While heating, use a whisk to blend it all together.  Slowly pour over other ingredients, being sure to cover them all.  (Feel free to poke holes through all of the ingredients so the sauce reaches the bottom.)  Liberally sprinkle the top with shredded cheese.

Bake at 350F for 30 minutes.  Remove from oven and allow to cool 10-15 minutes.  Serve. 


PS My brother's comment about this dish:  "Hmmm... this is WAAAAAAY better than Chinese food!  May I have seconds?!?"
